In fact, you can make aloo chaat the way you like it. While the Delhi style aloo chaat is very popular, in this post I am sharing an easy method of making aloo chaat. This is my easy version of aloo chaat recipe that gives you a tangy, chatpata chaat. The recipe can also be halved, doubled or tripled.

Delhi Style Aloo Chaat Recipe
Ingredients
for frying potatoes :
- 5 medium size potato boiled & peeled
- 1 tbsp butter
- 1/2 tsp oil
- 1/2 tbsp chat masala
for masala :
- 1 +1/4 cup tomatoes chopped
- 2 tbsp coriander leaves chopped
- 5-6 green chilies chopped
- 1 tbsp ginger grated
- 1/4 tbsp chat masala
- salt to taste
- 1 tbsp red chilli powder
- 1/2 tsp lemon juice
- 1 tbsp butter
for aloo chaat :
- 2 tbsp onion chopped
- 1/2 tsp black salt Kala namak
- 1/4 tsp black pepper powder
- 1 tsp roasted cumin powder
- 1/4 tbsp chat masala
- 1 tbsp lemon juice
- 2 tbsp coriander leaves chopped
- 2 tbsp sev or namkeen
Instructions
frying the potatoes :
- Collect all the required ingredients.
- Cut the boil potatoes into cubes.
- In a pan, heat 1/2 tsp oil, 1 tbsp butter, and 1/2 tbsp chat masala on low flame.
- Add potato pieces and fry till crisp and golden. Do not over mix, as the potatoes will break apart. you can fry potatoes in one or two batches depending on the size of the pan or kadai.
- Saute the potatoes till they turn golden brown from all the sides and it may take 8-10 minutes to get the crunchy texture. keep on turning the potatoes as required for even frying.
- Transfer to a plate and keep aside.
preparing masala:
- Clean the pan with tissue paper and in the same pan, heat 1 tbsp butter.
- Add grated ginger and saute its raw smell disappears.
- Then add green chilies and saute it for few seconds.
- Now add tomatoes and cook for a minute on low flame.
- After a minute, add salt, red chili powder, 1/4 tbsp chat masala, and 1/2 tsp lemon juice.
- Mix well and add chopped coriander leaves.
- Again mix everything very well.
- With a slotted spoon, mash the tomato mixture so that there are no lumps and it looks like a paste or chutney.
- Turn off the flame. Masala is ready for chaat.
making aloo chaat:
- When the potatoes are still hot, take them in a mixing bowl.
- Add the prepared masala.
- Also add all the spice powders like roasted cumin powder, black salt, black pepper powder, and 1/4 tbsp chat masala. You can adjust spice powders as per your requirements.
- Then adds 1 tbsp lemon juice or add as per taste.
- Toss and mix everything very well, so that the prepared masala, spice powders and lemon juice is evenly coated on the fried potatoes.
- Add some chopped onion and coriander leave to make it tastier. mix gently without breaking the aloo/potato pieces.
- place the aloo chaat in a serving bowl. While serving aloo chaat you can garnish with some pomegranate arils if you want.
- Top with the generous amount of onion and sev.
- Spicy and tempting Aloo Chaat is ready. Garnish it with green coriander and serve it as a snack or a starter snack. Relish the amazing flavors of Aloo Chaat to satisfy your cravings.
Notes
- Do not overcook the potatoes in the pressure cooker as they will lose the shape while sauteing.

- Do not overcook the masala so that it does not spoil the taste.
