Ingredients

for tomato gravy :

  • 3 cup tomato chopped
  • 1/2 cup onion chopped
  • 1 cup potato boiled and mashed
  • 1 cup white peas boiled
  • 1 tbsp ginger chopped
  • 1 tbsp desi ghee
  • 1 tsp black salt
  • 1/4 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/2 tsp black pepper powder
  • 1 tsp chaat masala
  • 1 tsp dry mango powder
  • A pinch of asafoetida
  • 1/4 cup water or as required

for serving chaat :

  • 3 tbsp onion finely chopped
  • 2 tbsp tamarind chutney
  • 2 tbsp green chutney
  • 2 tbsp fine sev
  • 2 green chilli finely chopped
  • 2 tbsp coriander leaves finely chopped
  • 1/4 tsp roasted cumin powder
  • 1/4 tsp chaat masala
  • 10-12 namakpare

Instructions

making tomato gravy :

  • Collect all the required ingredients.
  • Heat a tbsp of ghee in the kadai over medium flame.
  • Once ghee is heated, add chopped onion and ginger.
  • Saute for few seconds till the raw smell of ginger goes away.
  • Stir occasionally and saute for 3 to 4 minutes until the onions turn transparent.
  • Once the onions are nice and soft, add the chopped tomatoes.
  • Give it a mix.
  • Cook for about 5 minutes, until the tomatoes have softened and are completely mushy.
  • Saute the tomatoes while also mashing them with the spatula in between.
  • As the oil gets separated, lower the flame and add all the dry spices like black salt, red chilli powder, turmeric powder, coriander powder, and garam masala powder.
  • Also, add black pepper powder, dry mango powder, chaat masala, and a pinch of asafoetida.
  • Mix well.
  • Saute for couple of seconds.
  • Now that the onion-tomato mix has come together, add the mashed potatoes and boiled white peas.
  • Mix it well until the mixture comes together.
  • If needed, you can also add a little water until everything is combined well.
  • Keep stirring in between while letting them saute for 8 to 10 minutes on medium flame.
  • Using spatula or potato masher, start mashing the mixture to make a smooth yet textured chaat.
  • After mashing, give the Banarasi Tamatar Chaat a good stir.
  • Let it cook for another 2 minutes and turn off the heat.

  • Place 3 to 4 tbsp of the tomato mixture in serving bowl.
  • Drizzle some tamarind chutney on top.
  • Then drizzle spicy green chutney.
  • Now topped with some chopped green chilli.
  • Then sprinkle some fine sev.
  • Also, topped with finely chopped onions.
  • Sprinkle a pinch or two of chaat masala and roasted cumin powder.
  • Garnish with namakpare and chopped coriander leaves.
  • Serve this Banarasi Tamatar Chaat along with Dahi Bhalla Papdi Chaat Recipe and Dahi Papdi Chaat Recipe as a snack.
