Ingredients

  • 4 white bread slices
  • 1/4 cup eggless mayonnaise
  • 2 tbsp carrot grated
  • 2 tbsp capsicum finely chopped
  • 1 small size cucumber thinly sliced
  • Salt as required
  • Black pepper powder as required
  • Butter as required

Instructions

  • Collect all the required ingredients.
  • In a bowl, add eggless mayonnaise.
  • Add grated carrot and chopped capsicum.
  • Mix well and mayonnaise stuffing is ready.
  • Take 2 slices of bread and trim the edges of the bread. This step is optional.
  • Spread butter evenly on bread slices. Butter must be soft so that it can be applied on slices. If packing the sandwiches for tiffin box or picnics, then spread a generous amount of butter, so that the bread does not become soggy.
  • Then spread 2 tbsp of prepared mayonnaise stuffing over one of the buttered slices.
  • Place the slices of cucumber over the mayonnaise stuffing.
  • Sprinkle two to three pinches of black pepper powder, and salt on the cucumber slices.
  • Cover with another buttered bread slice and press them together very gently.
  • Cut it using sharp knife into desired shape or size of your choice. I have made 4 small bite-size pieces.
  • Insert the toothpick into the mini sandwiches.
  • Serve finger sandwiches as a tea time snack or party snack.
