French Fries Recipe

French Fries recipe is a deep fried chips prepared from thinly cut potatoes which is topped with salt and sometimes pepper. It is usually served hot, and is consumed as a part of lunch or dinner.

They are easy to eat as well as easy to cook. Thinly sliced potatoes are deep-fried till they’re crisp on all sides and then sprinkled with salt, pepper or really any seasoning of your choice. They are great to serve as an appetizer or with cocktails.

Being fried twice, these homemade french fries are crisp from outside and soft & tender from inside. The way the french fries should be.

This french fries recipe can also be a Navratari fasting recipe if you use rock salt (sendha namak).

French Fries recipe is a deep fried chips prepared from thinly cut potatoes which is topped with salt and sometimes pepper.

Ingredients
  

  • 2 large potatoes
  • 1 tsp black salt or rock salt
  • 1 tsp black pepper powder
  • 3 cups cold water
  • Oil for deep frying

Instructions
 

preparation for making french fries :

  • Collect all the required ingredients.
  • Peel the skin of fresh and large potato.
  • Now, wash the potatoes.
  • Before slicing, remove the top and bottom part of the potato to get a square or rectangle shaped potato.  This helps to get uniform potato fries pieces.
  • Make thick slices or to the size as required.
  • Then begin to cut them in thin sticks having approx. 1 ” thickness.
  • The potato sticks must be cut evenly, so they cook uniformly.
  • Take 3 cups of cold water in a bowl.
  • Dunk the potato sticks in cold water.
  • Keep the potato sticks immersed in cold water. Not only it prevents them from turning brown but also, helps to get rid of excess starch, resulting in crisper fries.
  • Soak all the potato pieces into cold water for 30 minutes. In a hot and humid climate, keep the bowl in the fridge.
  • After 30 minutes, drain the potato sticks in a colander.
  • Rinse the potatoes under running water till they are squeaky clean.
  • Place them on a clean kitchen towel or cotton napkin.
  • Lightly pat and dry the potatoes. The potatoes have to be completely dried before you begin to fry them.
  • Keep them in a tray or bowl. Use zip lock bag if you are going to store the potatoes for longer time and fry as required.
  • Freeze the potatoes for minimum of 1 hour. This helps potato turn firm.
  • Potato sticks are now ready to fry.

making french fries :

    first frying –

    • Heat the oil till you can see small bubbles on the side.  The oil should be medium hot.
    • Keeping the flame on medium, add the potato sticks one by one or else the oil might splutter or the potato fingers would stick to each other while frying. You can fry in two to three batches. I fried in three batches.
    • Do not overcrowd the kadai or pan. Make sure the potatoes have enough space and aren’t stacked on top of each other.
    • Stir often while frying them for uniform cooking.
    • Fry the potatoes sticks, till it softens and cooks the potatoes through.
    • Remove with a slotted spoon. Potato sticks should just get a crust from outside without any major color change.
    • Place the half fried potatoes on paper kitchen towels. Let the half fried potatoes cool down at room temperature.
    • After removing this batch, you can fry the second batch of potatoes. By the time you fry the second batch of the potatoes, the first batch will cool down. So in the same oil, you can fry the first batch of half fried potatoes.

    second frying –

    • Now increase the flame to a medium-high or high. The oil should be hot. You can see little smoke coming from the oil.
    • Add the half fried potatoes to the hot oil.
    • Turn the fries a few times while frying.
    • Fry till they turn crisp and golden brown in colour from all the sides.
    • Lift the potatoes out of the oil and let the rest of it drain.
    • Remove the french fries with the help of a slotted spoon.

    serving french fries :

    • Transfer the hot french fries in a bowl.
    • Sprinkle with some salt, and pepper powder. You can also add your choice of herbs and spices.
    • Gently shake and toss the bowl so that the salt and pepper. mix well with the finger fries.
    • Serve french fries hot with some any dip or sauce of your choice. They can also be served with burgers and cutlets.

    Notes

    • Soaking the potatoes in cold water help them to get crisp nicely and they get evenly fried.
    • Rinsing the potatoes in water or cold water helps to remove starch, which can cause the potatoes to stick together during the frying process.
    • Do not fry the potatoes to golden brown in the first batch. fry them till they get cooked and should not have any color. In the second batch, fry them till it reaches golden brown and crisp.
    • Soak the thinly cut potatoes in cold water or wash them in a running water till it stops releasing its starch.
