Golgappa , masala water, and aloo masala are prepared with numerous flavors. Crisp and crusty gol gappas filled with potatoes, aloo masala, sweet chutney and chilled flavored water make a perfect and great snack any time of the day. The most relishing part about these gol gappas is its water which comes in numerous flavors.

It is a popular street food of cosmopolitan cities like mumbai, delhi, Kolkata and bangalore. Gol Gappa is a term primarily used in North, Pani Puri in west and Puchka in the Eastern coast of India. Furthermore, the recipe as such of Pani puri is simple, however special care has to be taken to assemble it.

Gol Gappa best companion is its chatpata (tangy) water. You can’t simply gulp the water balls, without this mint based liquid.

Ingredients
  

Ingredient for Chatpata Pani :

  • 100 gms Coriander leaves (washed and cleaned)
  • 50 gms Mint leaves (washed and cleaned)
  • 1 Green Chillies chopped
  • 1/4 cup tamarind pulp
  • Salt to taste
  • 1 tsp black Salt
  • 1 tsp black pepper powder
  • 1 tbsp roasted cumin seeds powder
  • 1 tsp red chilli powder
  • 1 tbsp chat masala
  • 1 tsp lemon juice
  • 2 cup water

Ingredients for Aloo masala :

  • 2 big boiled & peeled Potato
  • 1/4 cup onion finely chopped
  • Salt to taste
  • 1 tbsp roasted Cumin powder
  • black salt to taste
  • 1 tbsp Red chilli powder
  • 1 tsp black pepper powder (optional)
  • 1 tbsp chat masala
  • 2 tbsp Residue of mint-coriander

Extra ingredients :

  • 40-50 piece Puri golgappa
  • 2 tbsp Onion finely chopped optional

Instructions
 

Making Chatpata Pani:-

  • Collect all the required ingredients.
  • Firstly, take a blender jar, put in a handful of coriander,mint,green chili and half glass of water and blend to a paste.
  • Strain it in a large mixing bowl and keep the residue aside. Residue is very flavorful, we’ll use that in masala/filling.
  • Further add tamarind pulp, regular salt, black salt, roasted cumin powder, red chilli powder, black pepper powder and chat masala. Mix it well.
  • Additionally, add lemon juice and 2 glass of water. Again mix it well.
  • Taste the water and adjust the salt or lemon juice as needed. Pani is ready.

Making masala or filling:

  • Collect all the required ingredients.
  • In a mixing bowl, add the boiled potatoes and mash them.
  • Further add chopped onion, regular salt, black salt, roasted cumin powder, red chilli powder, black pepper powder and chat masala. Mix well to combine.
  • Additionally, add residue of mint-coriander. Mix well and adjust to taste.
  • Aloo Masala stuffing is also ready.

Assembling pani puri recipe:

  • Collect all the required ingredients.
  • Start by gently making a hole in the center of the puri. Make sure not to break it.
  • Add 1-2 teaspoons of stuffing. also, add some onions. It is optional, though.
  • Now fill the puri with water.
  • Pani puri is ready to served. Now this will go immediately in your mouth before it gets soggy and water starts licking.

recipe notes for Gol gappa :

  1. Alter spices and chilies as per your preference. If you like spicy water then add more green chilies.
  2. Have puris immediately else they would become soggy.
  3. Make of your choice and make your style panipuri. However the main filling for Mumbai puri is the ragda filling.
  4. You could make everything in advance and then serve puris.
  5. It’s important to have spicy water chilled to have better flavor and impact of pani puri.
