Veg Chowmein(noodles) recipe is made in different ways with many different variations in different places, this one here is the quickest and easiest chowmein recipe, made under 30 minutes. Serve as a brunch or breakfast that kids would just love. You can also serve this as an evening snack or a side for an oriental dinner.

This is the popular Indian-Chinese noodles stir fry dish. This is loaded with vegetables and flavored with different sauces. The vegetable chow mein is a very popular and flavorful meal which you can easily recreate at home!

Serving suggestion: Because of the addition of various sauces and vegetables, this veg chowmein noodles taste good on its own and does not require any side dish. But this can be served with any Indo Chinese gravy e.g. Gobi Manchurian gravy, veg Manchurian or mushroom Manchurian.

VEG CHOWMEIN RECIPE
Ingredients
for noodles:
- 200 gms plain or whole wheat noodles or flat noodles
- 5 cup water
- 1/2 tsp salt
- 1 tsp oil
for veg chowmein:
- cabbage
- onions
- carrot
- 1 tsp salt
- 1/2 tsp black pepper powder
- 1 dark soy sauce
- 2 tbsp white vinegar
- 2 tbsp tomato ketchup
- 2 tbsp red chili sauce
- 2 tbsp spring onion chopped
- 2 tbsp oil
Instructions
preparing and boiling the noodles:
- Collect all the required ingredients.
- In a deep vessel enough to submerge the noodles easily. , add 5 cups of water, 1/2 tsp salt, and 1 tsp oil.
- Stir once and boil the water to a rolling boil.
- Once the water comes to boil, put the noodles in it then let it boil for 3-4 minutes.
- Allow the noodles to cook completely. We don’t need to cook them al dente since towards the end we will be just tossing the noodles. Noodles should be soft, not mushy.
- Turn off the flame and drain the cooked noodles in a colander.
- Rinse the noodles with water very well. This method stops the cooking process.
- Noodles are ready to use. Keep it aside.
making the chowmein:
- Heat the 2 tbsp oil in a wok on medium heat.
- Now add sliced onions and cook till onions get soft and translucent.
- Then add all the veggies (carrot, capsicum, and cabbage).
- Stir and saute on a medium flame till veggies get soft, do not overcook them. It may take only 1-2 minutes only.
- At this step lower the flame, season with black pepper and salt.
- Also add tomato ketchup, red chili sauce, and soy sauce.
- Mix well and let the sauce get heated through.
- Add the cooked noodles.
- Mix and toss the noodles with the stir-fried veggies till noodles are coated with sauce mixture well.
- Lastly, add vinegar and spring onion greens.
- Give a final mix to chowmein and switch off the flame.
- Serve veg chow mein steaming hot in serving bowls or to a serving plate. You can also garnish these stir-fried noodles with spring onion greens.

recipe notes/tips :
- Since I have used red chili sauce, I have not added the green chili.
- Do not over mix as the noodles will break.
- Do not overcook the vegetables and try to keep its crunchiness.
- Noodles are an open-ended recipe. It can be cooked according to the spice level required and with the choice of vegetables.
- Different types of noodles require different cooking time. So prepare noodles according to the package instructions.
- Do not overcook noodles as they will turn mushy and soft.
- Add vegetables of your choice like broccoli, baby corn, beans or mushrooms.
- According to your taste, all the sauces (soy sauce, chili sauce, ketchup) and vinegar are adjustable. The addition of ketchup gives nice sweet, tangy taste.
