All you need are just four easily available ingredients to get your hands on this scrumptious dish which are milk powder, milk, bread crumbs and sugar. You can garnish the rabri with cardamom powder and dry fruits to add on to the tempting flavors of this yummy rabri.

Instant Mango Rabri has the right amount of sweetness, creamy with fragrant mango tones providing a comforting goodness that only the king of fruits can.

It makes for a top class mango dessert garnished with flaked cashews, chopped pistachios and chopped mangoes.  This can be served in any occasion as a dessert. 

This is an instant recipe that uses bread to thicken the
rabri almost instantly. It reduces the time and energy
we spend laboriously stirring the milk till it thickens in
the traditional rabri recipe.

Instant rabri is made by boiling full fat milk. Adding sugar, milk powder and bread crumbs to reduce the overall cooking time of quick rabdi. Refrigerate for atleast 1 hour and serve instant mango rabri chilled.

Ingredients

for rabdi :

  • 3 cup full fat raw milk
  • 1 cup mango pulp
  • 1/4 cup mango cubes chopped
  • 2 white bread slices
  • 4 tbsp milk powder
  • 1/4 cup sugar
  • 10-12 cashews chopped
  • 1/2 tsp cardamom powder elaichi

for garnishing :

  • 2-3 pistachios chopped
  • 2-3 cashews chopped
  • Few strands of saffron
  • 2-3 tbsp mango cubes chopped

Instructions

  • Collect all the required ingredients.
  • We will first make homemade bread crumbs. For that, remove the crusts of the bread slices.
  • Grind the bread slices in a food processor to make fresh bread crumbs.
  • Keep aside.
  • Add the 3 cups milk to a broad non-stick kadai.
  • Bring the milk to boil on medium flame.
  • Once it boils, add fresh breadcrumbs.
  • Maintain a medium low heat and keep stirring in between.
  • After 2-3 minutes, start adding milk powder, 1 tablespoons at a time.
  • And keep stirring all the time.
  • Now add the second part of the milk powder. Mix and stir very well.
  • Continue to add and stir at non stop on a medium low flame for 3-4 minutes.
  • Then add sugar.
  • Mix well and cook on a medium flame for approx. 2 to 3 minutes, while stirring and scrapping the sides of the pan.
  • The rabri will become thicker.
  • Keep cooking the rabri on medium low heat till it starts looking shiny, around 2 more minutes.
  • Once the milk has thickened, switch off the flame.
  • Add chopped cashews and cardamom powder.
  • Mix it well.
  • Allow it to come to room temperature.
  • Add the mango puree and mango chunks.
  • Mix well till well combined.
  • Remove to a bowl and chill for a couple of hours. You can also serve at room temperature.
  • Garnish with the remaining chopped cashews, saffron and chopped mango pieces.
  • Scrumptious instant mango rabdi is ready. Serve chilled.
