Lemon Ice Cream Recipe with step by step photos and video recipe – is a dessert recipe for summer that will help you cool off and beat the heat. This recipe is loved by children and is easy to make. This ice cream is creamy, smooth and full of lemon flavor.  It’s simple to make, and it only has five ingredients.

Fresh Lemon Ice Cream is like no other ice cream you’ve ever had, homemade or store bought ~ the zippy, tart, citrus flavor is unique and so refreshing because it’s made with lots of fresh lemon juice. And it’s ready in under 30 minutes!

I love to make homemade ice cream in the summer but I certainly don’t limit my ice cream making to the summer months. It’s pretty much a year round activity at our house.

Even though I am not a huge fan of ice cream or kulfi recipe, but I am flattered with this lemon flavored dessert. Just the combination of the tangy and sour taste of lemon when mixed with creamy kulfi texture, is just amazing and out of this world. 

Kids are really fond of sweets and when it comes to ice cream, no kid can say no to it ever. With summers approaching, the charm of ice cream among kids is reaching its peak. They feel like having ice-cream every other day. Yes, it is quite easy and you don’t need an ice cream maker as well.

How To Make Lemon Ice Cream (Step By Step Instructions With Photos) :

preparation using lemon for ice cream :

1. Collect all the required ingredients.

2. To remove lemon rind, wash the lemon fruit thoroughly

3. Now place the lemon unpeeled on the holes of the grater and gently start peeling the skin.

4. It should consist of only the thin yellow skin and not the white portion. The white portion may taste bitter.

5. It has a nice fragrance and is used as ingredient in baked goods or desserts.

6. Now we will squeeze out lemon juice from these lemons. Cut the lemon into halves.

7. Squeeze out all the juice from the lemons in a bowl.

8. We need 1 tbsp lemon juice for this lemon ice cream recipe.

9. Lemon juice and lemon rind are ready. Keep it aside.

doing condense the milk :

1. In a heavy bottomed pan add milk and sugar and mix well.

Once mixed, simmer the milk for a 2-3 minutes, until sugar is dissolved completely. 

Turn the heat to low and simmer the milk with almost continuous stirring.

The milk will start to thicken slightly.

After 3 minutes, the mixture will turn frothy and silky smooth texture.

Turn off the flame and let it cool down at room temperature. Our homemade milkmaid is ready.

whipping the cream :

1. In another bowl, take about ½ cup heavy whipping cream or 25% to 35% low-fat cream.

2. Now begin to whip the cream on medium to high speed. Do not over whip otherwise you will end up with butter.

3. Check after 1 minute and then again after 30 seconds.

4. Whip till you get stiff peaks. The cream will increase in volume and when you take the whipped cream in a spatula or spoon and turn it down, the cream won’t fall.

making lemon ice cream :

1. Now add homemade milkmaid in it.

2. Then add lemon zest and lemon juice in it.

3. Also add lemon essence and green food color.

4. Now gently and with light hands, fold the mixture. Do not mix, but fold it.

5. The cream should not loose its peaks or volume and fall flat. So fold gently and slowly.

6. Smooth and creamy ice cream is ready. Very runny mixture may later form ice crystals.

7. Now transfer the ice cream mixture in a container or box.

8. Level the mixture.

9. Place a cling wrap or butter paper so that it touches the cream. This helps prevent ice crystals from forming.

10. Then cover the bowl with a cling wrap.

11. Now you are ready to freeze it. Freeze for 8 to 9 hours or overnight or till the ice cream is set.

12. Before serving, keep the ice cream box or bowl for some minutes at room temperature. Make sure to wet your scooper in hot water before scooping. This helps to scoop ice cream easily.

13. Scoop the ice cream in bowls or cups. Sprinkle some lemon zest on the ice cream if you want.

14. Serve the lemon ice cream as an cold Indian dessert for parties or during the festival or simply make for the summers and enjoy it with your family.
