How To Make Mango Ice Cream (Step By Step Instruction With Photos) :

preparing mango puree :

1. Collect all the required ingredients.

2. Rinse 2 mangoes (550 grams) a couple of times in water and then wipe dry. You can use other varieties of sweet tasting mangoes.

3. To prepare mango puree, dice the pulp of fresh mango into chunks.

4. Add the chopped mango chunks to a blender jar. I used about 2 cups mango chunks.

5. Add powdered sugar. Use sugar as needed depending on the sweetness of the fruit used.

6. Blend to a thick smooth paste without adding any water.

7. Make a fine puree. Do make sure that there are no small or finer chunks or pieces of mangoes in this mixture.

8. Give a quick stir with a spoon. Set this aside.

whipping the cream :

1. In another large bowl, take 2 cups chilled whipping cream. Ensure that the cream is cold or chilled before you begin to whip it.

2. With an electric beater, begin to whip the cream.

3. Whip till you get stiff peaks on medium-high to high speed. Do not overdo as the cream can curdle.

4. If you are using low fat cream then you may get soft peaks. You can also use amul cream or whipping cream preferably with 35% milk fat.

making mango ice cream :

1. Next add the prepared mango puree to the whipped cream.

2. Also add 3-4 drops of yellow food color for bright yellow color.

3. On the lowest speed, using the electric blender, whip and mix gently until everything is combined well and the mixture is even.

4. Make sure to do it very gently without deflating the cream. There should not be any streaks of fruit puree. 

5. Transfer to an freezer safe container.

6. Level with a spatula.

7. Place a piece of parchment paper so that it touches the cream.

8. Then cover the container with a cling wrap. It should always be tightly cover, as this avoids crystals from forming.

9. Freeze for at at least 8 hours, preferably overnight.

10. Let the ice cream sit on the countertop for about 5 minutes before scooping.

11. Scoop it to a serving bowl. If the ice cream is too hard, then dip the scooper in warm water and scoop.

12. Serve mango ice cream  scoops garnished with cherry.

Notes

  • Thicker the mango pulp, creamier and smooth will be your ice cream. Juicy, watery mango pulp may form crystals in your ice cream.
  • Make sure the mangoes chosen are not fibrous. If your homemade puree is fibrous, make sure to strain it before using it in the recipe.
  • Chill the bowl and beaters you are going to whip cream for 1 hour at least if you are staying in a place where the temperature is very high.
  • You can simply skip mangoes and mango puree and just add vanilla extract to make creamy no-churn vanilla ice cream or if you are a chocolate lover, add around 1/2 cup unsweetened cocoa powder to make chocolate ice cream.
