Masala Pav Recipe

Masala pav is a yummy and spicy Mumbai street food. The pav or bread rolls are sliced and then stuffed with a spiced buttery onion, tomatoes, and capsicum filling. It is one of the simplest and tastiest snack recipes, that we generally enjoy in the evening time.

Masala Pav is popular street food from Mumbai! Toasted buns are topped with a spicy masala, these are best enjoyed with chai. Sometimes, the pav is just roasted on the tava with butter, loads of coriander and pav bhaji masala. Ask for cheese along with it for a richer feel.

#Serving Suggestion:  Serve this masala pav hot as alone as a snack or with a cup of tea /coffee in the evening. It can be packed in kid’s lunch box or make for a small party also.

MASALA PAV RECIPE

Masala pav is a yummy and spicy Mumbai street food. The pav or bread rolls are sliced and then stuffed with a spiced buttery onion, tomatoes, and capsicum filling. It is one of the simplest and tastiest snack recipes.

Ingredients

for the masala :

  • 1 cup tomatoes finely chopped
  • 1/2 cup onion finely chopped
  • 1/4 cup capsicum finely chopped
  • 2 green chilli finely chopped
  • 1/4 cup coriander leaves finely chopped
  • 1 tsp ginger paste
  • 4 tsp pav bhaji masala
  • Salt to taste
  • 1/2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • Butter as required
  • 2 tsp Lemon juice
  • 1/4 cup water

for the pavs :

  • 2 pav/buns
  • Butter as required

for the garnishing :

  • finely chopped onions as required
  • finely chopped coriander leaves as required
  • 1 lemon slice

Instructions

preparing masala for masala pav :

  • Collect all the required ingredients.
  • Take a medium or large sized tawa or a griddle.
  • Melt 2 tbsp butter on a tawa on low-medium heat. You can also use oil instead of butter.
  • Add the grated ginger and chopped green chilies.
  • Stir and saute till the raw aroma of ginger goes away or till the ginger starts to change its color.
  • Add chopped onions and stir well. .
  • Saute the onions till they turn translucent or lightly golden brown.
  • Add chopped tomatoes.
  • Cook until they are soft and a little of mushy.
  • Saute continuously for 3 to 4 minutes on a low-medium flame.
  • Now add pav bhaji masala, turmeric powder, salt and red chili powder.
  • Mix the masalas very well with the onion-tomato mixture.
  • Cook the masalas for a minute.
  • Add the chopped capsicum.
  • Stir and saute for 2 minutes.
  • Then add 1/4 cup water and reduce the heat to low and let it cook for around 6-7 minutes or till water dries up.
  • Keep stirring in between till the mixture will thicken and reduce as it simmers.
  • The masala shouldn’t be dry but it shouldn’t be too watery either. So cook till the masala reaches that consistency. Then add in lemon juice.
  • And also add chopped coriander leaves.
  • Mix well and the masala is now done.

making masala pav :

  • Shift the masala to one side of the pan.
  • Melt some butter on the empty space in the tawa.
  • Cut the pav into half and place the pav on the butter.
  • Toast them lightly or you can just let them absorb the butter.
  • Turn over and toast the other side for few seconds.
  • Now spread a generous amount of prepared masala on both the pav with the spoon or spatula.
  • Smear some masala on the top as well.
  • Place the pav on a plate and add some onions and coriander leaves on top.
  • Serve masala pav hot with chopped onions and a piece of lemon.

How To Make Masala Pav (Step By Step Instructions With Photos) :

Recipe Notes :

  • There should not be a lot of liquids in the masala, as then this will make the pav soggy.
  • I have used store-bought buns here. You may use any buns of your choice.
  • Skip the butter and use oil to make it vegan.
  • The real Mumbai street food is always made with butter.  However, you can prepare it will oil too.
  • Use fresh pav for this recipe. Otherwise, pav may turn brittle and can break easily.
  • Garnish hot masala pav with grated mozzarella cheese to make cheesy masala pav.
  • Mashed potato can also be added after tomatoes, adding aloo means a thick curry, but personally, I do not prefer it.
  • Add generous amount of butter while frying pav.
