Mixed Vegetable Poha Recipe

Mixed Vegetable Poha is a Maharashtrian delicacy, which is a perfect balance of taste and nutrition. Poha recipe makes for a perfect breakfast recipe.

Poha tastes best when served with tea in the breakfast. It is also an excellent light yet stomach filling food item to pack in the lunch box. Poha has a slightly longer shelf life and can be used the next day.

Poha is a light breakfast or snack dish famous across India, Nepal, and Bangladesh. It is prepared with flattened rice or chiwda, which is husked rice that is flattened into a light and dry flakes.

MIXED VEGETABLE POHA RECIPE

Ingredients
  

  • 100 gms Poha Flattened rice
  • 20-22 Raw peanuts
  • 1 tbsp Mustard Seeds
  • 2 medium size Onion finely chopped
  • 2 medium size Tomato finely chopped seedless
  • 2 tbsp Green Capsicum finely chopped
  • 2 tbsp Carrot finely chopped
  • 2 tbsp Frozen Peas
  • 1 big size Boiled potato chopped
  • 1 Green Chilli Chopped
  • 2 tbsp Coriander leaves Chopped
  • 20-22 Curry leaves washed
  • Regular salt to taste
  • 1 tsp Red chilli powder
  • 1/2 tsp Tumeric powder haldi
  • 2 tbsp Vegetable Oil

Instructions
 

  • Collect all the required ingredients.
  • Place the Poha in a colander and rinse it well under running water. Stir the Poha gently by using your fingers while rinsing, otherwise they will become mushy at the time of cooking. Once washed set aside the Poha.
  • Heat oil in a kadai, add the mustard and allow it to crackle.
  • Add peanuts in the pan and cook it on low flame till the peanut is cooked properly and nice aroma comes from the peanuts.
  • Add onion and cook for another 1-2 minutes on low-medium flame till onions are translucent in the color.
  • Once the onions have softened, add carrot, capsicum and peas cook for 2-3 minutes on low-medium flame.
  • Further, add boiled potato and tomato and cook for another 1 minute.
  • Now, add curry leaves, green chilli, salt,red chilli powder, tumeric and mix it well with the veggies.
  • Furthermore, lower the flame and add the soft washed flattened rice (chiwda) to the pan and give the poha a gentle stir until all the ingredients come together.
  • Turn off the flame once the flattened rice (chiwda) is mixed well with the vegetables.
  • Add coriander leaves and mix it. Check the salt and seasonings and adjust to suit your taste and serve.
  • Serve Vegetable Poha along with Fruits and a hot cup of Adrak Chai for a wholesome breakfast.

How To Make Poha (Step By Step Instructions With Photos) :

1. Collect all the required ingredients.

2. Place the Poha in a colander and rinse it well under running water. Stir the Poha gently by using your fingers while rinsing, otherwise, they will become mushy at the time of cooking. Once washed set aside the Poha.

3. Heat oil in a kadai, add the mustard and allow it to crackle.

12. Serve Vegetable Poha along with Fruits and a hot cup of Adrak Chai for a wholesome breakfast.

How To Make :

  • Do not soak Poha in water. Just gently wash them thoroughly under running water
    and place them in a strainer to drip away excess water.
  • Adjust the flame while cooking to avoid blackening of the vegetables.
  • If you don’t have a strainer, just sprinkle a small amount of water over rice flakes and let them soak. Don’t use excess water. After soaking, poha should be moist but not wet.
  • Use medium thick rice flakes. Don’t use very thin rice flakes. You can also use brown rice poha.
  • A special tip for soaking Poha- just wash them till it gets wet in a strainer and leaves. Timings are important here. There should be enough moisture in the Poha to be fluffy, not mushy or dry. It’s best to soak Poha when you have chopped everything and ready to go.
  • Remember not to overcook the vegetables, they should remain crunchy.
  • If using potatoes I would always go for boiled potatoes. It makes Poha making super easy and quick. Although its optional and personal choice.
