Sooji Mini Pizza | Veggie Semolina Pizza which is a great option for breakfast. This recipe is very easy and simple to prepare within a couple of minutes.

Ingredients
  

  • 1/2 cup Suji/ Rava / Semolina
  • 3 tbsp Rice flour chawal ka atta
  • 1/4 cup curd
  • 2 tbsp Tomato chopped
  • 2 tbsp Capsicum chopped
  • 3 tbsp Onion chopped
  • 1/4 cup Mozzarella cheese grated
  • 3 tbsp Tomato ketchup
  • Salt to taste
  • 1 tsp Red Chilli powder
  • 1 tbsp Chat masala
  • A pinch of baking soda
  • 1/8 tsp Oil
  • 1/4 cup + 2 tbsp Water

Instructions
 

  • Collect all the required ingredients.
  • Take a bowl add suji, rice flour, curd and salt.
  • Mix well and it will be like a thick paste.
  • Now add water and stir till you get the smooth batter.
  • It should be thick yet runny.
  • Further add baking soda and give a gentle mix.
  • Make sure you mix the batter going in one direction.After adding baking soda, you will notice bubbles on the surface of a batter.
  • Heat a non stick tawa on medium flame and add few drops of oil on the surface of tawa.
  • Spread it using laddle and reduce the flame to low.keep the flame to its lowest. do use a heavy tawa or pan or else the base can get too much browned or burnt from the bottom. Also keep the flame to its lowest when making the entire recipe.
  •  Take ladleful of batter and pour into the pan and spread a little with back side of spatula into a circular disc.
  • Repeat the same process and make another mini pizza.
  •   Within few seconds you will notice lots of bubbles are forming. This means that your batter is well fermented and it will make very light and fluffy. And let it cook on low heat. Do not rush and do not increase the flame to high. Otherwise it will stay raw from inside.
  • Flip it  after a minute and quickly spread some tomato ketchup on the lightly toasted side.
  • Then sprinkle some chat masala and red chilli powder.
  • Top with small onion cubes. chop all the veggies and keep it ready before you start preparing the pizza.
  • Then place capsicum cubes. Keep the capsicum cubes small. while adding the topping keep the flame to its lowest.
  • Now top with small tomato cubes.While adding the toppings, you can also switch off the flame if you want.
  • Now top with grated mozzarella cheese or pizza cheese. Keep the flame to its lowest. Place a lid on the mini pizza.
  • Cook till cheese melts and the suji base is toasted.
  • Remove suji mini pizza with a spatula and place it on a serving plate. sprinkle somesev or namkeen if you want.
  • Serve suji mini pizza hot plain or accompanied with tomato ketchup or pizza sauce.

Recipe Notes :

  • You can add 1/2 cup plain buttermilk instead of 1/4 cup curd in this recipe,
    add less water (approx. 1/4 cup or less) while making the batter.
  • This recipe best suited for bachelors and beginners.
  • You can add your choice of veggies. steamed corn kernels or sauteed mushrooms or sauteed spinach can also be added.
  • Do use a heavy tawa or pan. if you use a tava or griddle which is not heavy, then the base can get burnt from bottom.
