Tutti Frutti Recipe Using Watermelon Rind with step by step photos and video recipe – is a great way to use up scraps and waste. A wonderful and delicious addition to cakes and cookies which not only adds color and flavor but you also feel good knowing you saved money by making something useful out of waste.

Tutti frutti made from watermelon rind is a great way to use up the entire fruit. Tutti frutti is a colourful and delicious addition to cakes & bakes. 

It’s such a simple & easy recipe. Don’t throw away the left over part of watermelon after eating the pink flesh. That’s all you need to make this awesome tutti frutti. Totally amazed by the output when I made this first time!! Hardly noticed any difference in taste & texture !!

While searching what to make of watermelon rind I came across recipe of tutti frutti made by raw papaya. I have eaten raw papaya many times and I know the taste and texture of raw papaya.

That’s how I got this idea to make tutti frutti using watermelon rind. First, I am not sure whether the result will fruitful or not. But when its done, I am shocked. It is exactly same as tutti frutti made by papaya.

How To Make Tutti Frutti Using Watermelon Rind (Step by Step Instructions with Photos) :

cutting the watermelon rind:

1. Collect all the required ingredients.

2. Scrape off any red portion (fruit) that is still clinging onto the watermelon rinds.

3. Peel and discard the green part of the watermelon rinds using a peeler or a sharp knife. 

4. Chop the white portion only into small cubes.

5. Cut them into stripes and later into small cubes. 

6. Now measure this small cubes. I got 2 cups of watermelon cubes.

blanching the watermelon cubes :

1. Boil the 2 cups water in a pan/kadai.

2. Add the chopped cubes into a pot or a pan.

3. Bring the mixture to a boil and cook the pieces for about 8-10 minutes or until the pieces begin to look translucent. 

4. Do not overcook them or soften them till they turn mushy. Turn off the gas and soak the pieces for 5 minutes in same water.

5. Drain off the water and keep aside till required.

cooking blanched pieces in sugar syrup :

1. To make the sugar syrup, add the sugar and the water into the same pan.

2. Boil until sugar dissolves completely.

3. Once the sugar is all melted, add the blanched watermelon rind cubes in sugar syrup.

4. Keep the flame on medium low and simmer for 15-20 minutes stirring in between.

5. Simmer gently until the syrup thickens and make sure to check for 1 string consistency of sugar syrup and watermelon cubes to turn soft yet retain its shape.

6. To check 1 string consistency, dab a drop of the hot syrup between your thumb & index fingers a thin thread linking the two fingers should form.

7. Remove from the flame and let it cool a bit. The watermelon rinds looks transparent. 

coloring the sugar syrup coated watermelon pieces:

1. Equally divide the mixture & the syrup equally into different bowls depending on how many colors you want to use.

2. Dissolve each food color with essence separately in different bowls. 

3. In one part, add 4 drops of pineapple essence in a bowl. Mix it well.

4. In second part, add 4 drops of mango essence in a bowl. Mix it well.

5. In third part, add 4 drops of pista essence in a bowl. Mix it well.

6. In fourth part, add 4 drops of rose essence in a bowl. Mix it well.

7. Cover and allow to soak for 12 hours or a day making sure that they get sweet and absorbs all the color.

drying the watermelon cubes :

1. After 24 hours, drain off the sugar syrup and allow them to dry over kitchen towel.

2. Spread it on plate and let it dry completely. 

3. Once the tutti-frutti dries off completely it will not be sticky.  When it dries, it will shrink in size.

4. Store the tutti frutti in any container and use whenever you want or refrigerate for later use.

Notes

  • Make sure the rind is semicooked or 3/4 th cooked before adding to sugar syrup.
  • The sugar syrup should be in 1/2 string consistency before adding cooked rinds.
  • After adding cooked rind to the sugar syrup boil till it’s single string consistency or sticky. Then only it stays good otherwise chances are there to spoil soon.
  • Store in refrigerator and can use when needed.
  • Cook the watermelon rind until it’s transparent and still retains its shape. Don’t over cook them otherwise it would be mushy.
  • Use any color as you like.
  • Make sure to let it dry completely and then store it.
  • Color get intensify when it’s dried completely
