Veg Pulao Recipe | how to make vegetable Pulao in pressure cooker

Vegetable pulav in pressure cooker recipe is a comfort one peat meal when we don’t have time to elaborate cooking or you have to cook food on a short notice or in a quick time. It is one of the easiest rice recipes that make for a wholesome meal.

Pulav recipes have always been my savior during those busy mornings. Very simple rice recipe, yet it has to offer a box full of taste. Perhaps, one of the most popular and most prepared rice recipes in many Indian households.

  

It is generally made as a lunch box or tiffin box recipe, but can also be made for occasions and celebrations. This recipe is dedicated to a basic version of veg pulao made with the choice of vegetables without any particular flavor. While there are several variations and flavors to pulav recipes. But the idea of vegetables, whole spices, and Basmati rice remains the same.

Serving suggestion: Serve vegetable pulao hot with spicy chutney and mix vegetable raita.

Ingredients
  

  • 1 cup Basmati Rice (soaked & washed)
  • A bowl of Mix Vegetables chopped potato,cauliflower,carrot
  • 1/4 cup Frozen Peas
  • 2 big onion sliced
  • 2 green chillis chopped
  • 1 tsp lemon juice
  • 2 tbsp vegetable oil
  • 2 tbsp pure desi ghee
  • 1.5 cup water

Spices

  • 2 bay leaf / tej patta
  • 10-12 whole black pepper
  • 3 cardamom / Elachi
  • 4 cloves
  • 2 cinnamon Stick
  • 1/4 tsp garam Masala
  • 1 tsp cumin Seeds
  • Salt to taste

Instructions
 

  • Collect all the required ingredients.
  • Heat pressure cooker and add all dry spices and roast it for a minute on low flame. Saute them till the dry spices become aromatic and fragrant.
  • Heat add oil and desi ghee. Also, add cumin seeds and fry them for few seconds on low flame.
  • Now add finely chopped onions. Saute the onions on a low flame till raw aroma is gone. Stir often for uniform browning.
  • Then add slit green chillis.  Stir and saute it for 10 seconds on low flame.
  • Add all vegetables(cauliflower, potato, carrot, peas) of your choice. Saute them for a couple of minutes on the low medium flame.
  • Add garam masala and again saute it for few seconds on low flame.
  • Add the drained and washed basmati rice (soaked for 20 minutes). Saute them gently for a minute without breaking rice grains low medium flame.
  • Pour 1.5 cups of water. Depending on the quality of rice, you may need to add less or more water.
  • Add salt as required and stir the pulao gently.
  • Add lemon juice and give a final mix.
  • Cover the pressure cooker with lid. Pressure cook for 1 whistle on high flame or till the rice gets cooked completely.
  • Allow the pressure to release by itself.
  • Once the rice grains are cooked, with a fork gently stir the rice without breaking the rice grains. Fluff and let the rice stand for 5 minutes.
  • Serve the veg pulao hot with plain raita or mix vegetable raita.

14. Once the rice grains are cooked, with a fork gently stir the rice without breaking the rice grains. Fluff and let the rice stand for 5 minutes.

15. Serve the veg pulao hot with plain raita or mix vegetable raita.

recipe notes :

  • Add vegetables of your choice like capsicum, french beans to make pulao recipe more nutritious.
  • Add mint or coriander leaves for more flavors.
  • Its always better to soak rice for 20 to 30 minutes. Soaking rice grains gives a better texture when they are cooked.
  • Pulao can also be cooked in vegetable stock instead of water. Pulao made in a vegetable stock has a different taste and color.
  • You can always alter the number of spices and herbs as per your taste.
  • Adding lemon juice helps to cook rice completely.
  • Pressure cook the rice for just 1 whistle only.
  • Some fried dry fruits like cashews and raisins can also be added to make pulao more delicious and restaurant style.
