for momos dough:
2+1/2 cupAll purpose flourmaida
1/4cupwater or as per requirement

2cuponion finely chopped
1cupcarrot finely chopped

1tspdark soy sauce
3tbsp Amul fresh cream
2tbspcoriander leaves chopped
preparing momos dough :
Collect all the required ingredients.
Take a bowl, add maida and salt.
Mix well and add water slowly (little by little) and knead dough till the dough are soft and non sticky.
Pour 1 tsp of oil and knead well again for a minute.
Cover the dough with a plate or moist cloth and keep aside for 10-15 minutes.
making veg momos stuffing :
In a wide pan or kadai add 3 tsp of oil.
Then add carrot and saute it for few seconds on medium flame.
Now add onions and saute till they sweat.
Add grated panner, salt, black pepper powder, soy sauce and vinegar.
Just give a good mix. Do not fry for a long time as panner will become hard.
Allow the stuffing to cool before you prepare momos.
preparing gravy for momos :
In a bowl, first add momos chutney.
Then chopped coriander leaves, sliced onion, chilli flakes.
Now take Amul cream in the same bowl where we kept momos chutney. The quantity of momos chutney and cream should a 1:1 ratio.
Before adding it to the bowl, mix it for few seconds.
Mix it until all the ingredients combined well.
Gravy is ready. Keep it aside.
shaping the momos:
Take the prepared momos dough and pinch a small portion and make balls.
Take each dough ball and flatten on a lightly dusted board.
Start to roll using a rolling pin to an almost medium thin circle. The edges have to be thin and center have to be thick.
Place 1 or 2 tsp of vegetable momos stuffing in the center.
Start pleating the edges slowly and gather everything.
Join all the pleats in the center. Press in middle and seal the momos. With this you will get round shaped momos.
Prepare all momos this way and keep them covered under a moist napkin till you are ready to steam them.
steaming veg momos:
Take a momos maker or any vessel and add 2 cups of water to it. Place the vessel on flame for simmering. Let the water come to a boil.
Grease the sieve with some oil and place the momos at some distance on to it. This prevents momos from sticking to tray.
When the water starts simmering, place the sieve over the vessel and cover it well.
Now let the momos steam for 12 minutes. Keep the flame medium.
Once done and the momos are cooked as well. There is change in the color of momos and appear shiny on the surface. Turn off the flame .
Now transfer the momos to the plate.
preparing gravy momos:
Drop the steaming hot momos into the gravy mixture.
Coat them well very gently. Ensure that momos does not break.
Heat a pan and lower the flame, transfer the gravy mixture to the pan.
Cook it on low flame for 3-4 minutes or until bubbles form in the gravy.
Serve steaming hot and super delicious gravy momos are ready.
Don’t overdo the steaming, as the dough becomes dense and dry.
Prepare the stuffing of your choice.
If you want to have these momos later then cook them for 7 to 8 minutes and keep aside covered with a cloth. Whenever you wish to serve the momos, steam them again for 2 to 3 minutes more. Serve them piping hot.
Don’t roll out the poori for stuffing too thinly at the center.
The steaming time may vary upon the thickness of momos’ cover.
When you touch the momo then dough should not feel sticky to you. this means they are done and the momos will have a transparent look.
Time of cooking momos varies from the intensity of the flame and kind of pan and the steamer you are using.
