Zarda Recipe

Zarda recipe with step by step photos and video recipe – is a delicious traditional North Indian yellow sweet rice recipe delicately flavored with saffron, dry fruits, nuts, and aromatic spices. Also known as Kesari meetha chawal in Hindi, this sweet pulao is joyously served during festivals and weddings.

This delicious cardamom and saffron flavored sweet rice  provides a wonderful end to any meal. It is also easy to cook and loved by both children and adults alike.

Ingredients
  

  • 1 cup golden sella rice
  • 15-20 almond sliced
  • 15-20 cashews sliced
  • 15-20 raisins
  • 1/4 cup dry coconut sliced
  • 1 tsp cardamom powder
  • 5 tbsp ghee
  • 1/2 cup milk
  • 20-25 saffron strands
  • 3/4 cup sugar
  • 5-6 cloves
  • 1/8 tsp orange food colour
  • 1/4 cup tutti frutti

Instructions
 

cooking rice for zarda :

  • Collect all the required ingredients.
  • To make zarda rice, we use golden sella rice, but if you do not have golden sella rice then you can also use basmati rice.
  • Wash and clean the golden sella rice and keep it soaked in water for 2 hours.
  • After 2 hours, remove excess water from the rice.
  • Put a large vessel on the gas and add 3-4 cups of water to boil a zarda rice.
  • Add a ⅛ teaspoon of orange food color in water for boiling water.
  • Bring water to a boil.
  • When the water comes to a boil, add the soaked rice.
  • Mix gently, cover the rice and cook for 10-15 minutes on high-medium flame.
  • Do check a couple of times when the rice is cooking.
  • Making sure that the rice is half cooked. We have to cook rice only 80 to 90 percent.
  • After 15 minutes, rice is lightly cooked, switch off the flame.
  • To filter the rice, keep the sieve over a vessel and filter it by putting rice on the sieve so that extra water can be released.
  • Set it aside.
  • Soak the saffron in 1/2 cup for at least 15-20 minutes.
  • With a spoon stir, so that the saffron strands mix with milk.

making zarda rice :

  • In a heavy kadai or pan, add desi ghee.
  • With a spoon or spatula spread ghee on all sides of the pan. This is done so that the rice grains do not stick to the pan when cooking.
  • After ghee melts, add cloves.
  • Fry for a few seconds.
  • Then add coconut, cashews, raisins, and almonds to it.
  • Fry them lightly on low flame. Do not burn them.
  • After lightly roasting of nuts, add saffron milk.
  • Then add cardamom powder and sugar.
  • Mix well but gently, so that the sugar gets mixed evenly.
  • You will see the sugar melting and some liquid consistency in the mixture.
  • Allow it to boil for 3-4 minutes or until sugar is melted.
  • Now add cooked rice.
  • Gently mix and make sure that all the rice coats well with sugar-saffron mixture.
  • After that, cover the pan with a tight lid and simmer on very low flame for 15 minutes.
  • Stir in between to prevent from burning.
  • Again cover the lid and cook until the rice is cooked completely and do not overcook as rice turns mushy.
  • Once there is no liquid consistency, zarda rice is ready.
  • Switch off the flame and let the kadai be covered and let them rest for 10 minutes in the same vessel.
  • Open the lid and then add tutti frutti.
  • Gently mix it well.
  • Serve zarda rice hot or warm.

20. Gently mix it well.

21. Serve zarda rice hot or warm.
